    There was an article in Quick & Simple magazine about World Egg Day. I was not aware of such celebration but it sure seems like it could be fun to learn about eggs and their wholesome place in our diets. I do not eat chicken but I love eggs. There was a receipe in the article . Breakfast Burrito With Ham :(1) Melt 2 tablespoons butter in a large nonstick skillet over medium heat.(2)Add I/2 medium diced onion and saute about 3 minutes. (3) In a bowl, whisk together 12 large eggs , 4 ounces diced , cooked ham , 1 tablespoon finely chopped parsley, and one and a half cups shredded Cheddar cheese. (4) Pour into the skillet and season with salt and pepper, to taste . ( 5) Gently scramble until eggs are set but still moist. (6) Warm 6 flour tortillas . (7) Spoon egg mixture down the center of each tortilla and sprinkle with shredded cheddar cheese and roll up tortillas. ( 7) Enjoy !!!!!

    The receipe above is for 6 servings. I am planning a surprise brunch for my son's 32nd birthday and will be making double the receipe. I feel quite sure the receipe can be down sized too if you need less than 6 servings.

    Hubby and I tried making the receipe and subsituted extra veggies for the ham. We used chopped bell peppers and sliced mushrooms . It tasted very delicious. I topped mine with fresh salsa .

    I wonder if tofu baked in advance in some kind of sauce would be a good ham substitute as well?

    World Egg Day...can't say I've ever heard of that before :)

    You can buy tofu in a can that has been pre-cooked in a sauce to make it taste more 'meat-like,' if that makes sense...that might possibly work for the recipe?

    I've forgotten what it was called though. I'll see if my parents know tonight...

    I've never seen tofu in a can! In the US its in a plastic tube and they do have some that are pre-cooked and flavored. Would probably work very well. :P

    I also found some 'pretend' duck in a tin as well once, which tasted really nice...don't know if it tasted anything like real duck though because i've never had it :D
